While I was starting to go through my mom’s things I found some of her recipes in her own handwriting.  These vegan recipes are forever in my heart and now thanks to the recipes, in my tummy.

Chat #172 Extra Credit was Where’s The Beef?  A sad reminder that COVID-19 has changed our world forever.  I mean when Wendy’s doesn’t have hamburgers it’s a whole new world (and now I’m singing Disney songs again…)

So a world with limited beef, eggs are scarce, I’m not panicking and you shouldn’t either…because hip pockets are for phones, hands and kick butt back up plans.  When you can’t find meat (or for days you just want something meatless) use one of Nana’s butt kicking plans for feeding even the most picky carnivore.

Nana's Eggless Egg Salad

Yield 8 heavy 1/2 cup servings

The addition of Turmeric gives this "egg" salad it's classic yellow color and just a touch of extra flavor.  Follow Your Heart Vegenaise is creamy, delicious, everything you would look for in a mayo type salad dressing and blends so well with the tofu that the texture is perfect!

Ingredients

  • 1 pound extra firm tofu
  • 1 cup diced celery
  • 1/2 cup shredded carrots
  • 4 sliced green onions
  • 1/2 cup Vegenaise (or similar) 
  • optional 1 Tbsp brown rice syrup
  • 1/4 tsp turmeric
  • 2 tsp Dak's Everything But Tha Salt (or 1 tsp garlic powder / 1 tsp sea salt / 1/2 tsp black pepper)
  • 1 Tbsp Dijon mustard
  • optional 1 Tbsp vinegar
  • approximately 1 Tbsp finely chopped flat leaf parsley 

Instructions

  1. Drain tofu and place in large bowl.  Using your hands (clean hands!) "crumble" tofu gently until you have even crumbles and no big lumps
  2. Combine Vegenaise, spices and mustard in a separate bowl to form dressing and set aside
  3. Combine remaining ingredients and lightly toss until mixed
  4. Fold in dressing and gently stir until everything is coated
  5. Ready to eat immediately, but the flavors "blend" if stored covered in the fridge overnight before served.  Must be consumed within 3-5 days of opening tofu package

Notes

Tofu is a great meat replacement and can be fun!  Just like you wouldn't crack open an egg and eat it unprepared, find a creative recipe to bring flavor and amazing textures to your tofu.  Best used within 3-5 days of opening the package.

I love this “eggless” salad on a sandwich, with crackers or pita chips, or topped on a salad.  You can make a half batch if it’s just you, but honestly I could eat the entire bowl myself!
