Nana’s Vegan Fruity Tart – 4 Weight Watchers Points Plus per serving

I honestly struggled with whether to post the dinner Nana made or the tarts first.  The stir-fry tofu was so yummy, but when I put the first bite of this delicious dessert in my mouth I had a knee jerk “stomp your foot reaction”.  So tarts it is.

I have been playing with the won ton wrappers for weeks now and of course being Nana she had to one up me.  In a sweet way.  A very sweet way…that was so yummy.  She used Spring Roll Wrappers and they were the exactly what these tarts needed.


Nana’s Vegan Fruity Tart – 4 Weight Watchers Points Plus per serving (4 servings)

Ingredients:

  • 4 small frozen spring roll wrappers
  • 2 Honeycrisp apples diced
  • 2 small pears diced
  • 1 cup blueberries
  • 1/4 cup Sugar in the Raw
  • 1 tsp cinnamon
  • 1 tsp maple syrup

Chop apples and pears. Mix and toss apples, pears, blueberries, sugar and cinnamon. While you are mixing the filling ingredients, take 4 small baking dishes (approximately 4″ in diameter) and flip them upside down.  Lay one spring roll wrapper on each to allow it to thaw and soften.  Remove thawed spring rolls and gently press one into each bowl turned right side up.  Add 1/4 of fruit mixture to each wrapper.  Drizzle each one with 1/4 tsp of the maple syrup.


Preheat oven to 350. Place all four bowls on a cookie sheet and cover loosely with aluminum foil shiny side out.  Bake for 45 minutes to an hour, checking at 45 minutes to make sure wrappers are not getting too brown.  Allow to cool a few minutes for fruit mixture to “set”.  If you have extra points add 2 tbsp of So Delicious Dairy Free Coco Whip for 1 points plus.   These are so good no one will believe they are also good for you!
