Ooooooooh I’m drooling…..I know I say all the recipes are good.  But come on, I wouldn’t post them if they weren’t good right?  This one is sooooo good though.  I mean slap my mama (but not too hard, she’s little) good.

My husband is supposed to be out of town.  I’m supposed to be having blueberry pancakes for dinner.  But he’s still in town, he doesn’t eat pancakes, and I hadn’t been to be store.  So on the drive home as I went thru my mental inventory of what was in the fridge this happened.

Three Cheese Tomato Basil Naan – 6 Weight Watchers Points Plus per serving (2 servings)

Ingredients:

  • 2 Stonefire Tandoor Mini Naan (I get mine at Costco)
  • 2 tbsp That Pickle Guy Muffalata (Costco)
  • 1/4 cup Trader Joe’s Fat Free Ricotta
  • 1 oz fresh mozzarella
  • 2 slices Velveeta cheese
  • Sliced tomatoes
  • Fresh Basil
  • Smart Balance non stick spray

Place the Naan on a cookie sheet covered in parchment paper and spray one side of each with the Smart Balance

Flip the Naan over spray side down and evenly spread the Mufallata onto one Naan

On the other Naan spread the ff ricotta, then layer with Velveeta and mozzarella.  Add the sliced tomato and basil on top of Mufalatta.

Quickly flip the cheese Naan over on top of the tomato basil Naan.  Preheat oven to 325 and cook for 12-15 minutes or until cheese is melted and bubbly around the edges.  Remove from oven and allow to cool for 5 minutes for cheese to set before cutting.  Using a sharp bread knife carefully cut into servings.  Make sure you have someone else sitting there waiting to eat so you don’t accidentally eat both.  It could happen!
