Tzatziki Corn Muffins – 3 Weight Watchers Points Plus per serving

I know what you’re thinking.  She’s lost her mind.  She just eats egg mugs and muffins all day.  Every day.  How can she eat so many eggs and muffins?  This one is a corn muffin thank you very much and that is totally different.  Totally. 

  
I also have a little obsession with Tzatziki.  Last night I had a little Tzatiki left and a little cornbread mix left.  And you know how my curiosity gets me sooooo…

Tzatziki Corn Muffins – 3 Weight Watchers Points Plus per serving (6 muffins, 1 muffin per serving)

Ingredients:

  • 1 cup Marie Callender’s Low Fat Original Cornbread Mix
  • 1/2 cup Tzatziki sauce
  • 1/2 cup water
  • Smart Balance Spray

You might want to rest. Heck even take a nap. This one is hard, you may get tired before we are done…
Mix cornbread mix, Tzatziki and water in a medium size mixing bowl with a handle. Spray 6 regular muffin cups with Smart Balance spray. Preheat oven to 375 degrees. Bake for 17 degrees or until a toothpick inserted comes out clean. Let sit for just a few minutes (if you can) to set and then serve immediately. I added another tbsp Tzatziki on top for 1 more points plus to mine. Enjoy!
