A mixture of yogurt, chopped cucumber, and seasonings, used as a sauce or a dip in Greek cuisine.
I still can’t pronounce it, but I have managed to incorporate Tzatziki into almost everything I’ve eaten this month.  Salads, muffins, on baked tortillas….now in an egg mug.  And it was delightfully Greek and delightfully delicious.

Tzatziki Egg Mug – 4 Weight Watchers Smart Points (4PPV)

Hands down Egg Mugs are my favorite go to breakfast!  Super easy, super quick, very filling and I haven’t met an Egg Mug I haven’t liked.  I have several egg mug recipes that I’ve borrowed, tweaked or turned into mine.  This is just one of many!  And Tzatziki…it’s just so yummy and so versatile, why have I not discovered it before now?

Tzatziki Egg Mug – 4 Weight Watchers Smart Points (4PPV)

Ingredients:

  • One farm fresh egg
  • 1 tbsp crumbled Feta Cheese
  • Diced Mushrooms (I prefer baby bellas)
  • Fresh kale and/or baby spinach
  • 2 tbsp Hannah Organic Tzatziki Greek Style Yogurt Dip (or other low fat Tzatziki)
  • 8-12 banana pepper rings
  • Fresh ground black pepper
  • Olive oil non stick spray

Spray mug, muffin cooker or crock bowl with non stick spray.  Add everything but the egg and cook in microwave on high for 30 seconds
Crack open egg and add to bowl stirring gently but evenly into the other ingredients.
Return to microwave for up to 2 minutes on high.  If you have a low wattage microwave or the mixture is still “loose” continue to microwave in 20 second increments until everything is firm but not hard.  Add fresh black pepper.  Let sit for one minute before trying to remove from bowl to move to bread or plate.  The egg “muffin” should slide out easily.  Use your imagination, these are a delicious and quick filling breakfast…enjoy!
