For all my vegan friends, this is going to be a new favorite in your lunch and dinner rotation! Personally, I’m not vegan or vegetarian but I do love a good meatless meal and these vegan loaded mashed potatoes are a perfect fit for me.

These vegan loaded mashed potatoes are the perfect side to any dish!

Even though this recipe is made with vegan-friendly ingredients, I promise the civilians in your life will love them and probably won’t be able to tell the difference!

Vegan Loaded Mashed Potatoes

Yield 10 1/2 cup servings

5 SP Blue | 5 SP Green | 3 SP Purple

Ingredients

Instructions

  1. Add 2 slices of veggie bacon to your air fryer basket (I recommend the Simple Living Products air fryer). Spray with oil and top your veggie bacon with a drizzle of sugar-free maple syrup, Truvia sweetener, and Dak’s Red Mountain Rub.
  2. Cook bacon in your air fryer at 320 degrees for 8-9 minutes checking, checking frequently and flipping part way through. Set aside.
  3. Peel and boil potatoes, then mash.
  4. Add oat milk, Tofutti cream cheese, Daiya shreds to your mashed potatoes
  5. Top with crumbled veggie bacon and chopped green onions
  6. (optional) Top with an additional sprinkle of Dak’s Red Mountain Rub.
