Vegan Pesto – 2 Weight Watchers Smart Points (2PPV) per serving

Vegan Nana is a vegan (duh), a gardener, an avid reader and a recycler.  A recycler of things.  Lots of things.  Lots of odd things….one of her most favorite recycled items lately is a stray sprig of any kind of herb.  Sometimes I think it’s to see if she can revive something that is nearly beyond resuscitation, but that would be kinda creepy so we will just say she’s a recycler.  She has sprigs of sprouting peppermint, spearmint, and all kinds of basil.  I am the proud recipient of one of the basil sprigs and it has done quite well.  Well enough that I have a thriving plant and can make things like this.

Vegan Pesto – 2 Weight Watchers Smart Points (2PPV) per serving (10 servings)

Ingredients:

  • 2 cups fresh basil leaves
  • 1 cup baby spinach leaves
  • 1 tbsp minced garlic
  • 1 tbsp lime juice
  • 1 tbsp water
  • 1/4 cup extra virgin olive oil
  • 1/8 cup pine nuts
  • Sea salt to taste

This is really hard.  You may need a nap first.  Stretch a little.  Are you ready?

Add all ingredients to a blender, food processor or similar (I used my brand spanking new Ninja Bullet)


Pulse until all is blended smooth.  (You may need to stop and scrape the sides back down to the blades if yours is as exhuberent a blender as mine is).  And about 5 or 6 minutes later, tada!  Seriously.  You’re done.  Stop checking the instructions, it’s over.  Now check one of my other recipes for something yummy to eat it on or make up one of your own.  Just be sure to share the recipe with the rest of us!
