In the extra credit portion of Chat #215 we used the ingredients from a traditional Watergate Salad for a new creation – Watergate Salad Overnight Oats! You all know I wasn’t always an overnight oats fan, but I’ve come to love and love coming up with new and exciting ways to prepare them.

Watergate Salad Overnight Oats

5 SP Blue | 6 SP Green | 2 SP Purple

Ingredients

  • ⅓ cup old fashioned oats to any container
  • ⅓ cup of your favorite milk (or milk substitute)
  • ¼ cup nonfat plain Greek yogurt
  • 2 pumps (or 1 tbsp) of Vanilla Jordan’s Skinny Syrup
  • 1 tbsp of Jell-o sugar free pistachio pudding mix
  • 2-3 scoops Del Monte no sugar added very cherry fruit mix
  • 1 tsp crushed pecans

Instructions

  1. Combine oats, milk, yogurt, skinny syrup, and pudding mix in a mason jar (or your favorite container)
  2. On top that mixture add a layer of fruit mix
  3. Top with crushed pecans
  4. Add a lid and place the container in the refrigerator overnight (or at least for a few hours)
