Who doesn’t love a good copycat recipe? If you love Olive Garden’s pasta e fagioli but need a point-friendly alternative, this is the recipe for you!

As many of you know, I’ve spent the last 14 days stepping away from my usual WW My Way Green and following the Purple plan instead to meet some of my health and wellness goals. One of my biggest concerns was that my hectic schedule would make it challenging to choose healthy options.

Pasta e Fagioli + Watermelon = A Perfect Lunch!

So this week, I made a batch of this plant-based pasta e fagioli to serve as pre-made lunches throughout the week that are ready to heat and eat!

Plant Based Pasta e Fagioli

Yield 12 servings

Green 6 SP | Blue 4 SP | Purple 4 SP

Ingredients

  • 2 cups unsalted vegetable cooking stock
  • 14 oz beefless crumbles
  • 1 cup uncooked onion
  • 1 cup uncooked carrots
  • ½ cup uncooked celery
  • 14 ½ oz no salt added diced tomatoes
  • 2 ½ cups canned black beans
  • 2 ½ cups kidney beans
  • 24 oz low sodium marinara sauce
  • 1 tsp Frank’s RedHot Original cayenne pepper sauce
  • 4 servings whole wheat penne rigate
  • 2 tsp DAK’s Italian seasoning

Instructions

  1. Add everything but pasta to slow cooker and cook on low for 6-8 hours
  2. Cook pasta until tender and add a few minutes before serving

  1. I can’t wait to try this recipe but I can’t figure out how it can be the same points on blue and purple since on purple whole wheat pasta is zero points and on blue whole wheat pasta has points?!?! Thanks!

    • Hi Pam! Great question! You should always run any recipe you get off the internet through your WW recipe builder to double check ingredients and points values. Everything combined and divided into servings yes this recipe is the same on Blue and Purple, 2 more points on Green. Thanks for checking in and let me know how you like it!
