Like all good Southern girls, I love me some Tuna Noodle Casserole. But who has time to prep and make one after you get home from a long day at work or playing taxi driver for the kids all day? Am I right? Where are my hallelujah girls (and fellas)?


The kind folks at Fortune have provided yet another easy alternative to spending time boiling egg noodles, assembling a casserole, and THEN waiting on everything to bake.



Fortune Yakisoba Stir Fry Noodles are pre-cooked and steamed, cholesterol free, microwavable, vegan, provide up to 7 grams of protein per serving, and can be ready in as little as 3 minutes. Using these delicious noodles instead of going the traditional route for this recipe saved me so much time and effort that I was able to get dinner one the table and still have energy left over to enjoy it!

One Skillet Soy Ginger Tuna Noodle Casserole

Yield 6 servings

Ingredients

  • 1 package Fortune Yakisoba Stir Fry Noodle Soy Ginger Flavor (prepare according to package directions for microwave)
  • 1 can wild caught tuna packed in water
  • 1 steam in bag of Green Giant Riced Veggies (I used Cauliflower Medley) or your favorite frozen veggies thawed
  • 1/2 cup shredded cheese
  • 1/2 cup my recipe Fat Free Cream Cheese
  • 1 tsp sesame oil
  • 1 Tbsp crushed garlic (I use Spice World brand)
  • 1 Tbsp crushed ginger (I use Spice World brand)
  • Sprinkle of sesame seed (optional)
  • Garnish (optional)

Instructions

  1. Prepare Stir Fry Noodles according to package directions for microwave
  2. Add oil, garlic, ginger and tuna to a skillet and sauté for 5 minutes over medium heat
  3. Add riced veggies and sauté for another 5 minutes
  4. Reduce heat to low and fold in noodles, shredded cheese and cream cheese
  5. After gently mixing together, serve immediately with your favorite garnish and a few sesame seeds

Notes

Serve immediately or allow to cool and freeze for up to 2 months. Best served warm!
