Fresh, in-season peaches make this easy recipe irresistible. Low/no sugar - let the peaches do all the hard work making it sweet. Fantastic with cream cheese on toast, over ice cream, in yogurt, and more. You'll be making up ways to eat this before you know it!

Ingredients

  • 6 fresh, ripe peaches
  • ¼ cup lemon juice
  • ⅓ cup low- or no-calorie sweetener (I use monk fruit sweetener)
  • 16 Tbsp sugar-free pectin
  • ½ cup boiling water

Instructions

  1. Wash, pit, and slice fresh peaches or use frozen peaches (I don’t peel my peaches to add color)
  2. Add sliced peaches to a blender or food processor and pulse until almost smooth (little chunks add texture!)
  3. Add lemon juice to peach pulp and gently stir
  4. Mix sugar-free pectin and sweetener together. Add boiling water while whisking until smooth and all dry ingredients are wet. This should be the consistency of cake batter when done.
  5. Add pectin sweetener mixture to peaches and gently stir until well blended
  6. Using a canning funnel for less mess, add peach mixture to small glass jars (or Souper Cubes if you’d prefer to make single servings)
  7. Eat immediately, store in fridge for up to two weeks, or freeze for up to one year
