This week has been a crazy one for me. My father-in-law has been hospitalized, suffered two heart attacks, and undergone quadruple bypass surgery. My family and I have become caregivers for him as well as for his wife who suffers from Alzheimer’s. 

A perfect bite of my lightened up Waldorf Salad

As a caregiver, you have little to no free time and eating healthy is a serious challenge. To make sure I put some real food in my body this week, I’m making a lightened up Waldorf Salad in advance.

If you know someone who is a caregiver and could use a break from cooking (or really, anyone who could benefit from a premade meal) this is a great option to make for them!

Skinny Waldorf Salad

Yield 8 1/2-cup servings

Green 1 SP | Blue 1 SP | Purple 1 SP

Ingredients

Ingredients:

  • 2 cups chopped celery
  • 2 cups red seedless grapes, halved
  • 1 large (or 2 small) apples, cubed
  • 1 cup nonfat, plain Greek yogurt
  • 1 tsp Chia seeds
  • 1 pump Jordan’s Skinny Syrups - Vanilla
  • 1 tsp monk fruit sweetener
  • 1 tbsp water
  • ¼ cup chopped walnuts

Instructions

Instructions:

  1. Combine all ingredients in a large bowl
  2. Stir until well mixed
