That Man’s Chicken Salad

This recipe yields approximately six 1 cup servings depending on how much celery and grapes you add. So easy and delicious, This is a great light meal. Served with salad or fruit, or just roll up in a romaine lettuce leaf for a low carb treat!

That Man’s Chicken Salad

Yield 6 one cup servings

Ingredients:

  • ½ cup Hellmann’s Light Mayonnaise
  • ¼ cup G Hughes Sugar Free Sweet Vinaigrette
  • ½ cup Light & Fit Greek Plain Nonfat Yogurt
  • 1 cup Celery, chopped
  • 3 cups Cooked Boneless Skinless Chicken, chopped
  • 1 Medium Uncooked Scallion
  • 1 cup Grapes, sliced or quartered

 

Instructions:

  1. Make chicken breast according to the That Man’s Chicken Breast recipe or use canned chicken breast.
  2. Let chicken cook and either cube or shred
  3. In a separate bowl combine mayo, yogurt, and dressing (kick it up with some additional vinegar, relish, or even pickle juice for a fun mix!)
  4. Toss all ingredients together, cover and store in the fridge for 3 hours or overnight

 

Notes: Best when stored in the fridge for at least 3 hours - overnight. Stores well for up to 3 days in the fridge. Freezing is not recommended. Don’t like grapes or need a substitute? Try blueberries, apples, or strawberries!
