Fourth of July.  Family Reunion.  Church Picnic.  What do these have in common?  Well in the south that means Jell-o salad of some form or the other.  Or at least in our family it did.  I can’t tell you how many renditions of Waldorf Salad, Watergate salad and even just the classic Jell-o mold like Aunt Bethany provided to Clark and Ellen on Christmas Vacation I have consumed over the years.  Sans the dry cat food of course.

But this Independence Day I decided to check up on an old favorite and make sure it was hitting all the marks.  Fluffy – check
Cold – check
A little sweet but not so much that it accidentally got put on the dessert table – check
Green – double check
Low in points – uh oh….

Weight Watchergate Salad 3 FSP per serving

Apparently the beloved Watergate Salad recipe my grandmother accidentally passed down (she never wrote them down and I’m not sure why) was a whopping 9 Smart Points per 1/2 cup.  It’s delicious and all but 9 points?  I give it a three.  Hmmmm 3 points, we may be able to work with that.

Weight Watchergate Salad: 3 Freestyle Smart Points

Yield 6 1/2 cup servings

3 SP Blue | 3 SP Green | 3 SP Purple

 

Ingredients

  • 2 cups fat free Cool Whip softened
  • 1 cup non fat plain free yogurt (I use Dannaon Light & Fit)
  • 2 pumps (2 tbsp) Vanilla Jordan's Skinny Syrup
  • 4 tbsp Jell-o sugar free pistachio pudding & pie filling dry powder
  • 1 can drained Del Monte no sugar added very cherry mixed fruit (or similar)
  • (optional) 1 cup crushed pineapple in its own juice, drained
  • 1/8 cup chopped nuts (I like to use walnuts or pecans)
  • 2 tsp vanilla extract
  • 2 tsp Truvia Baking Blend (or similar)

Optional: Add 1/2 cup of mini marshmallows (if you do this, be sure to add an extra SP)

Instructions

  1. Drain fruit and then lightly toss everything else together.  
  2. Chill in refrigerator for at least an hour before serving.  
  3. Makes great leftovers for up to a couple of days!
