The holidays are just around the corner and we all know how difficult it can be to stay on plan  during this time. Between family favorites and desserts galore, it can be easy to get off track. But it doesn’t have to be!

We’ve talked a lot in our last few chats about ways to succeed during the holidays and I’ve taken it upon myself to bring you a variety of recipes you can make for your next get together that taste great and won’t break the bank on points!

Today I’m bringing you a favorite of mine – the world’s easiest loaded mashed potatoes! These will quickly become a staple in your kitchen.

World’s Easiest Loaded Mashed Potatoes

Yield 10 servings

4 SP Green | 4 SP Blue | 4 SP Purple

Ingredients

  • Trader Joe’s frozen mashed potatoes (28 oz.)
  • 1 cup Velveeta Shreds Cheddar (or similarly pointed cheese or cheese product of your choice)
  • 8 oz. fat-free cream cheese
  • 1 cup nonfat plain Greek yogurt
  • 2 slices crisp cooked bacon, crumbled
  • 1 tbsp chives
  • DAK’s Steakhouse seasoning
  • ¼ cup water

Instructions

  1. Bring pan to medium heat
  2. Add frozen mashed potatoes and water to pan; cook until potatoes reach your desired consistency (9-10 minutes), stirring regularly
  3. Stir in cream cheese, Greek yogurt, bacon, and cheese until well-mixed
  4. Season with DAK’s Steakhouse and chives
  5. Serve and enjoy!
