You can make this with just watermelon, but what fun would that be? The fun colors of watermelon, cucumbers (especially if they are home grown!), with feta and a drizzle of balsamic are what make this summer time treat a keeper in our family. So quick, so easy, literally just toss and eat. Perfect for picnics, get-togethers, a day at the beach or in the mountains, or sitting alone just enjoying the peace and quiet of a summer afternoon.

Cucumber and Feta Watermelon Salad

Yield 1 serving

Ingredients

  • 1 Cup Fresh Watermelon, Cubed
  • ½ Cup Cucumber, Cubed
  • ⅛ Cup Athenos Traditional Reduced Fat Crumbled Feta Cheese
  • 1 Tbsp G Hughes Sugar Free Balsamic Vinaigrette Drizzle

Instructions

  1. Cube watermelon and cucumber
  2. Toss with arugula, top with feta and drizzle with balsamic
  3. Serve immediately or chill for not more than a few hours. Not recommended for prepping the day ahead
