If you’ve been around the If You Have An Egg world for long, you know that I’ve not always been the biggest fan of overnight oats. But now that I’ve learned to love them, I’m bringing you another of my favorite overnight oat recipes.

Originally made as a St. Paddy’s Day treat, these pistachio flavored overnight oats are the perfect way to celebrate a special day or just wake yourself up in the morning to a filling and nutritious breakfast. 

I love to top my pistachio overnight oats with cherries, but you can add whichever fruit or other toppings you prefer to #bulkitup a little.

Pistachio Overnight Oats

Yield 1 serving

Ingredients

  • ¼ cup uncooked old fashioned oats
  • 1 tsp of Truvia baking blend (or another low- or no-calorie sweetener)
  • 1 tsp chia seeds
  • 1 tbsp (roughly ⅛ of a package) of sugar-free pistachio Jell-O pudding mix (dry)
  • ⅓ cup non-fat plain Greek yogurt
  • ⅓ cup milk of your choice
  • (optional) Protein powder

Instructions

  1. Add all dry ingredients to a jar or other small container with a lid and stir
  2. Add wet ingredients and stir again
  3. Close lid and put in fridge overnight (or at least for a couple of hours)
  4. Enjoy cold or heat for 30-60 seconds for a warm oat treat!
